Leftover Oatmeal Cake

Do you find yourself with leftover oatmeal no matter how much you try to make just enough? Well, feel good about saving and not wasting those leftovers with this fluffy, moist and tender absolutely delicious oatmeal cake. Enjoy this goodness anytime of the day. You will be glad you saved it!!!

Ingredients

I and 1/2 cups organic unbleached all purpose flour

1/2 cup honey or date paste

1 teaspoon sea salt or pink himalayan salt

1 teaspoon cinnamon powder

1 tablespoon baking powder

1/2 cup raisins

1/4 cup cacoa nibs

1/4 cup walnut(optional)

1/2 cup water or milk

3 tablespoons grass fed butter(melted)

1 organic egg

1 cup cooked and thick oatmeal(Old Fashioned or Steel Cut Oatmeal are Best)

Preparation:

Preheat oven to 350 degrees.

Grease a 3 quart glass baking dish with butter or coconut oil

Combine all dry ingredients in a medium bowl

Whisk all wet ingredients in a large bowl

Mix dry ingredients in wet ingredients in two batches. Do not over mix

Spread batter in greased baking dish

Bake for 30 minutes or until cake is set in the center and a toothpick comes out clean.

Let cool and Enjoy!
