Eggplant Wild Salmon Sauce


Wild caught salmon is a nice source of protein. It’s also rich in Omega 3 fats which is very beneficial to our cardiovascular health. Avoid farmed raised fish fed with toxic ingredients that alter their nutritional makeup. Enjoy your salmon baked, steamed or cooked in your favorite sauce. Try our nourishing salmon cooked in eggplant sauce. Enjoy with some steamed brown rice, quinoa or steamed/baked sweet potato for a very yummy nourishing meal.
Ingredients:
2 medium Eggplants
1 medium Onion
4 Tomatoes
1 pound wild caught salmon
¼ cup Olive Oil
Salt
Black Pepper
Spices of choice-I used thyme, homemade garam masala, turmeric.
Directions:
Wash and dice eggplants, onions and tomatoes
Cut Salmon in cubes and season with salt and black pepper
Warm oil in skillet, add onions and tomatoes. Let cook until wilted.
Add eggplant
Cook on medium heat for about 15 minutes or until eggplant becomes tender
Add spices, black pepper, turmeric.
Add seasoned salmon
Let cook for about 15 minutes
Taste for salt, add more if necessary.
Reduce heat and let simmer for about 5 more minutes.
