This yummy heart-healthy baked oatmeal is a staple in my home. Its made with nutritious rolled oats, sweetened with date paste and flavored with food grade vanilla essential oil and cinnamon.
Ingredients:
3 cups organic rolled oats
1 teaspoon aluminum free baking powder
2 teaspoons cinnamon powder
1/4 teaspoon sea salt
1 and 1/2 cups unsweetened coconut milk or water
2 large eggs
1 medium sized banana (mashed)
1/4 cup unsalted grass fed butter (melted)
1/2 cup date paste
3/4 cup chopped walnuts (optional)
1 and 1/2 cups organic berries
3 drops vanilla essential oils (optional)
Directions:
Preheat oven to 350 degrees
Grease a 9 by 13 glass baking dish with melted butter
Mix all wet ingredients in a large bowl
Mix all dry ingredients in a medium bowl
Add dry ingredients into wet ingredients. Mix until well combined
Fold in berries. Pour into baking dish and bake for about 40 minutes. Let cool and enjoy!
