Beets and Greens Salad

Beets and Greens Salad

In my opinion, salads are meant to be delicious, naturally colorful and appetizing. Try any of my nourishing salads that would have you craving more of the healthy stuff than ever before.

Ingredients:

2 medium red beets

2 cups of organic spring mix

1 large carrot stick- makes one cup

2 pieces organic red radishes

1/2 cup organic pitted green olives

2 tablespoons hemp seeds

Supermom’s homemade Vinaigrette

Preparation:

Clean beets, carrots, and radishes. Pat dry.

Slice beets and radishes into small bite sizes

Using a potato peeler, peel carrot skin, then shave them into long thin ribbons

In a medium bowl, combine spring mix, olives, radishes, and carrots. Top with sliced beets and sprinkle with hemp seeds.

Drizzle with my homemade salad vinaigrette. Serve immediately.

Tips:

Pair salad with healthy homemade oven fries, baked salmon or baked chicken.

***Always choose organic produce when available. This will help you avoid contamination due to pesticides and other genetically modified organisms along with their unpleasant side effects.
