Radishes are one of the healthiest vegetables so I decided I was going to love them…no matter what! I have always hidden them in my smoothies because they tasted sort of bland in my salads. This time around, I decided to roast them and they tasted AMAZING!(with minimal effort!) Pairs well with other vegetables. Toss them in your favorite spices like ground cumin, turmeric, smoked paprika, garlic powder, and a good quality oil. Give it a try today and let me know what you think.
Ingredients:
1 lb. radishes, ends trimmed and quartered
1 tbsp avocado oil
1/4 tsp dried dill
3 garlic cloves, finely minced (garlic powder works too)
Salt and Pepper to taste
Preparation:
- Preheat oven to 400℉.
- In a medium bowl, combine the radishes, oil, salt and pepper and toss until radishes are evenly coated.
- Transfer radishes into a 9×13 inch baking dish (Ensure they are spread out in a single layer.)
- Bake for 25 minutes, or until radishes are golden brown and cooked through.
