Health Benefits of Eggplants

Eggplants are a low-calorie, nutrient-dense food. This means they are high-fiber foods that are rich in nutrients and loaded with many potential health benefits.

Among its amazing health benefits include reducing the risk of heart disease, due to its high antioxidants content which protect us from free radicals. These nourishing vegetables also help in blood sugar regulation by slowing the absorption of sugar and rate of digestion so that we do not experience the spikes and crashes. Due to its fiber content and being a low calorie food, It may also support weight loss. It’s a simple and delicious addition to any healthy diet. Eggplants are also incredibly versatile and fit well into most dishes like quinoa, sweet potatoes, and brown rice.

Try My Nourished Supermom’s Eggplant Moussaka Recipe: Serves 6

Ingredients

  • 2 Medium Eggplant (large, stem removed, cubed)
  • 1/2 cup Extra Virgin Olive Oil (divided)
  • 1 Yellow Onion (diced)
  • 5 Garlic (cloves, minced)
  • 1/4 tsp Sea Salt
  • 2 Tomato (medium, diced)
  • 1 tbsp Tomato Paste
  • 1 tsp Smoked Paprika
  • 1 cup Water (as needed)

Directions

  • Preheat the oven to 400°F (205°C). Coat the eggplant in half of the oil and roast until tender and browned, about 20 minutes.
  • Meanwhile, heat the remaining oil in a large pot. Sauté the onions, garlic and salt until soft, about 6 to 8 minutes.
  • Add the tomato, tomato paste, smoked paprika and eggplant. Bring to a simmer and cook for about 20 minutes. Add water as needed, until your desired consistency is reached. Enjoy!
