Oh-So Delicious Zucchini Bread

One of the most delicious ways to enjoy a veggie like zucchini is to make this zucchini bread. Made with spelt flour, sweetened with date paste and cinnamon! Spelt flour is a kind of ancient grain which is more nourishing and more digestible than modern varieties of wheat. However, the spelt flour in this recipe can substituted for all purpose flour.

Ingredients:

2 and 2/3 cups spelt flour

2 tsp baking powder

2 tsp baking soda

1 tsp sea salt

1 tablespoon cinnamon

2 cups grated zucchini

1 cup date paste

1 cup olive oil

3 large eggs

1/3 cup walnut (optional)

1/2 cup raisins

3 tablespoons coconut shreds(for topping)

Cream cheese (optional)

Directions:

Preheat oven to 350 degrees

Greeze two glass loaf pans with coconut oil

In a large bowl, combine and mix all wet ingredients (without zucchini)

In a medium bowl, combine and mix all dry ingredients (without walnut)

Add dry ingredients in two batches into wet ingredients.

Gently fold in walnut (if using), and grated zucchini.

Divide the batter between the two loaf pans. Sprinkle with coconut shreds.

Bake for 40 minutes. Let cool and enjoy!
