Green Beans are heart healthy and full of essential vitamins and minerals our bodies need to thrive. Add this delicious stir fry to this week’s menu and treat yourself to a healthy meal your body deserves.
Ingredients
- 1lb boneless chicken breast (sliced thinly)
- 2 tablespoons avocado/pure olive oil
- ½ red bell pepper
- ½ yellow bell pepper
- ½ cup carrots cut up in bite sized chunks
- Salt, black pepper to taste
- ½ teaspoon thyme, sage, curry to taste
- Coconut aminos
- Organic Stone Ground Mustard
- 1 tablespoon toasted sesame oil
- 2 cups green beans
Preparation
- In a large skillet, add 1 tablespoon of oil and let warm over medium heat
- Add chicken, curry, thyme, and sage with pepper and salt
- Cover pot and cook for 3 to 5 minutes or until cooked through
- Add onions, yellow and red bell peppers stir and cook uncovered until slightly tender
- Add green beans, cover pot and let steam for about 2 minutes until beans are tender but still dark green.
- Mix mustard, coconut aminos, and sesame oils in a small bowl and drizzle over green beans. Stir and let cook for another 40 seconds.
- Remove from heat and leave the skillet slightly uncovered to prevent vegetables from further heat.
